Banana Coconut Bread

Okay, okay. I know, I have been MIA these past few days but this week has just been one of those weeks where I have had no desire to cook or bake. Last night my husband was searching the house for baked goods so I told him I would make something today. So right now as we speak I have a banana coconut bread in the oven. 

Ingredients:
1/2 cup oil
1 cup white sugar
2 eggs
1 tsp vanilla
3 mashed ripe bananas
2 1/2 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup shredded coconut

Preheat your oven to 350 degrees

Steak Salad Bowl

This dish I came up with about a year ago and it has been a favourite ever since.  I think I could eat it once a week and never get sick of it! You can do so many different varieties of vegetables and change it up constantly. I hope you enjoy it as much as we do.

Ingredients: (for 2 bowls)
Cut of your favourite grilling steak
1 cup of quinoa or couscous (measured before cooking)
1/2 cup mayonnaise
3 Tbsp juice from a lemon, separated 
1/4 cup cilantro, plus more
1 garlic, minced
mixed greens
veggies (Avocados, Peppers, Beets, Red onion, Tomato's...)
cooked Parmesan or feta cheese

Snickerdoodles

Well Christmas is just around the corner (I know I am early but as soon as Halloween is over I am thinking CHRISTMAS CHRISTMAS CHRISTMAS!!!) Yes, I might be listening to the Lady Antebellum's new Christmas cd as I sit here. I am not sure if these are a true Christmas cookie but when you roll a ball of cookie dough in cinnamon and sugar it is most definitely allowed to be in that category. So have a holly jolly Christmas this year;)

Ingredients:
1/2 cup softened butter
3/4 cup white sugar
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking powder
1/4 tsp salt
2 Tbsp white sugar
1 1/2 tsp cinnamon
Preheat your oven to 375 degrees. This recipe makes 20-24 cookies
