Easy Chicken Parmigana

The great thing about blogging about food is that you end up experimenting a lot more with food then you would otherwise. Cooking also becomes more exciting because you get to share your masterpieces with those around you. I hope that as you read my blog and follow some of my recipes that you mix things up and try new ingredients in my dishes. And when you do this, share with me your ideas so I can try them too.
Tonight's dinner always gets raving reviews around my dinner table. Even my 2 year old son Lincoln says "I like it mom, it's nice." This meal is great to make because I don't find it takes a lot of time. Roll up your sleeves and start cookin'.





First, grab a 9x 13 pan. Pour 1 large can of tomato sauce into your pan, 2 if you like extra sauce on your pasta or you are cooking for more then a family of four. Chop up a handful of fresh basil and fresh parsley. Dump it on top of the sauce. Crush in 1 garlic clove and grate in 1/2 cup Parmesan cheese. Season with salt and pepper and stir altogether. Move to the side for now.


In 3 separate bowls, scoop 1/2 cup flour in one dish, 2 eggs, beaten in another and 1 cup of breadcrumbs. My favourite type of breadcrumbs to use in cooking are Panko breadcrumbs, I highly suggest you get these. In the dish with flour season with 1 tsp garlic powder, 1 tsp onion powder, salt and pepper to taste, mix.



Preheat your oven to 375 degrees. In a frying pan, pour in a substantial amount of canola or vegetable oil. Approx. 1/4 to 1/2 cup. set the temperature to medium high. While that is heating prepare your chicken breast. 


Take 1 chicken breast and dip it in the flour, covering it fully. 


Take that breast and saturate it in the whisked egg. 


Lastly, cover it completely in the bread crumbs. Continue with the rest of your chicken. I did 3 large chicken breasts for myself, husband, 3 year old and 2 year old. 


Once your oil is hot place your chicken in oil. Regulating heat if you need to. The oil may splatter a bit so be careful. You want to cook your chicken approx 5 minutes on each side. Do not worry about cooking your chicken thoroughly as it will go in the oven. 


Concentrate on getting a crispier, evenly browned crust.


While your chicken is cooking, pour 1/2 cup cream into your sauce and either swirl it around in your sauce or mix it up to make a rose sauce.


Place your chicken directly into the sauce in your 9x13 dish and place in your preheated oven. Cook for 30 minutes. Meanwhile, heat your water for your pasta noodles. At 30 minutes place mozzarella cheese on top of your chicken and cook for a remaining 10 minutes or until your cheese is starting to brown.


Cook up linguine noodles, fettuccine or spaghetti noodles until al dante. Drain.


Spoon sauce over your noodles and place a chicken breast on top! This dish will be a crowd pleaser. I promise you that.

  1. I'm going to attempt this tonight...ever since getting pregnant, for whatever reason, I've failed to cook a decent meal. I don't know why. It's like all my cooking abilities have failed me. If this works, my hubby will be very appreciative of you!
