6-8 large potatoes, quartered
1 cup of water
2 freshly squeezed lemons
1/3 cup olive oil
3 minced garlic cloves
3 sprigs of fresh oregano
In an oven proof dish quarter up your potatoes
Add to your potatoes, 1 cup of water with the juice of 2 freshly squeezed lemons.
Add 1/3 cup olive oil,
3 minced garlic cloves,
and 3 fresh sprigs of oregano chopped up. Mix together. Pour over your potatoes.
Bake in oven at 325 degrees for approx. 1.5 hours. Every 20 minutes or so turn and baste.
To get a nice crisp on the outside of the potatoes broil for the last few minutes.
