Alfredo with Bacon, Onion and Almonds

This meal is quite similar to a nice carbonara pasta, but with a twist. I got raving reviews from my kids and husband so you may need to try this one out! If you like a little spice to your pasta add a couple dashes of Franks Red hot sauce and it makes the dish really yummy.

Ingredients:
Chunk of bacon
1 large onion, sliced
1/4 cup almonds, sliced
1/4 cup soy beans
3 tbsp butter
3 tbsp flour
1 garlic clove, minced
2 cups milk
1 cup parmesan cheese
salt and pepper to taste
Pasta noodles




In a frying pan, saute a chunk of bacon or 5-6 strips. Set aside to cool


In the same frying pan, once you've removed your bacon and haven't drained out the fat, add 1 sliced onion to frying pan and saute until onions are a nice golden brown color approx 10 minutes.


Chop up bacon and place in a small bowl along with onions.
Place 1/4 cup cooked soy beans (according to package) in with the onions and bacon
In a different frying pan, roast about 1/4 cup sliced almonds, set aside



While you are making your sauce you can prepare your pasta noodles (many types of pasta would work for this meal)
To create your alfredo sauce, melt 3 tbsp butter in a saucepan.


Add 1clove garlic, minced. Heat until butter is sizzling but the garlic isn't burning. Season with salt and pepper


(please ignore, my half chipped nail polish:)


Place 3 tbsp flour into butter and whisk together. Allow the butter to cook about a minute watching it doesn't burn.


Add 2 cups of milk


Lastly, place 1 cup of freshly grated parmesan cheese in milk. Bring the sauce up to a slight boil and allow to thicken. If too thick for your liking adjust by adding a little more milk. Remove from heat and adjust seasoning with salt and pepper
Add almonds to garnish mixture (onions, bacon...)


Mix together sauce and noodles, place on plates and top off with your garnish mixture.
Delicious!

  5. Edamame beans. I get big boxes from Costco which are individually wrapped but you can also just get a bag of them in your grocery freezer aisle. They are a really good, healthy snack and kids love to eat them too, especially when they can pop them out of the shells themselves.
