Mango-licious Ribs

So, I tried creating you all a real Mississippi gumbo the other night with chorizo sausage and prawns. Well, it looked delicious and I am sure it was not as bad as I seem to think it was. You are always your hardest critic when it comes to your own cooking. My family ate it and seemed to think it wasn't as bad as I was making it sound. I will post a photo for you so you could see what it looked like and you can determine for yourselves if you would like to see the recipe. (The photo is posted at the bottom of this blog post)
Growing up Ribs was always one of my favourite meals and it still might be. These ribs are so so yummy. They are sweet and a little spicy all at the same time. Grab a finger bowl, you will need it!


Ingredients:
Rack of pork ribs
1 really ripe mango
3/4 cup bbq sauce
2 tbsp brown sugar
1 garlic clove
4 dashes of hot sauce
1 small handful cilantro




In a dutch oven use a potato masher and mash up 1 peeled ripe mango.


Add 3/4 cup bbq sauce


Add 2 tbsp brown sugar and 1 garlic clove, minced


Splash in 4 large dashes of hot sauce (I prefer Franks Red Hot Sauce)


Chop up 1 handful of cilantro and add to sauce, mix


Break your ribs into about 4-5 sections. Cover with sauce and place in a 250 degree oven, covered.


After an hour, uncover and turn heat down to 225 degrees. Turn every 20 minutes, basting with sauce for another hour.


mmm,mmm they won't last!
