This dish I came up with about a year ago and it has been a favourite ever since. I think I could eat it once a week and never get sick of it! You can do so many different varieties of vegetables and change it up constantly. I hope you enjoy it as much as we do.
Ingredients: (for 2 bowls)
Cut of your favourite grilling steak
1 cup of quinoa or couscous (measured before cooking)
1/2 cup mayonnaise
3 Tbsp juice from a lemon, separated
1/4 cup cilantro, plus more
1 garlic, minced
veggies (Avocados, Peppers, Beets, Red onion, Tomato's...)
cooked Parmesan or feta cheese
First thing I like to do is season my steak and leave it sitting out until it is almost room temperature before placing it on a hot grill. You can season your steak as easily as some coarse sea salt, pepper, garlic. Or spice it up however you would like.
Secondly, get your quinoa or couscous on the stove. Follow the instructions on your box or bag. Fluff it up with a fork when done and set aside in a bowl to cool a bit.
While your quinoa or couscous is cooking, in a bowl, combine 1/2 cup mayonnaise, 1 garlic clove minced, 2 tbsp squeezed fresh lemon and 1/4 cup chopped cilantro. Set this aside.
Prepare your vegetables. I like to grill peppers on my BBQ while I am cooking my steak. So you can seed those and half them. You can slice up cherry tomatoes, avocado is fantastic in it, chopped green onions or Red Onions and pickled beets. You really can come up with your own variety but these items are delicious!
* If you are going to bake some fresh Parmesan to have as a garnish for your bowl, on a baking sheet place a piece of parchment paper. Preheat your oven on broil. Grate Parmesan cheese in 2 long lines a couple inches wide. Broil in the oven. Stay very close by and keep checking on cheese, it will burn very quickly. Remove it once the edges have a nice golden edge. This will only take a minute or so.
Prepare your steak to your wellness, don't forget to stick your peppers on the grill! Mix your sauce in with your couscous, leaving a couple Tbsp to top off your bowl.
Place a handful of mixed greens in the bottom of your bowl (I like to drizzle some olive oil and a little lemon on top of my greens)
Top with a big scoop of couscous and spread over lettuce.
Place your veggies on top, slice up your steak and place on salad, Place your Parmesan cheese or crumble some feta cheese on top, some extra fresh cilantro and a dollop of your sauce. You can also squeeze that extra half of lemon on top.
