Chicken Tortilla Bake

Last time I made a tortilla bake I was not impressed by the recipe I used. So this time I am going to just create my own recipe for a tortilla bake and see how it turns out. My daughter has swimming lessons today at 5:00. Great time as that usually falls around dinner time! I wanted to create a meal that I could prepare earlier and then throw in the oven when I get home. Here's hopin' it turns out!!!



Ingredients:
2 chicken breasts, shredded
2 garlic cloves
1 onion
1 can green chopped chili's
1 can tomato sauce
1 tsp chili powder
2 tsp cumin
1 can black beans
8 flour tortillas
2 cups shredded chedder cheese
sour cream, salsa, guacamole (optional)

Atlantico Firework Cocktail

Well since Canada Day and 4th of July are just around the corner I thought I would share with you this delicious cocktail!  What better way to spend your holiday with a drink made with Enrique Englesias hot new rum! The drink tastes even better when you envision him while drinking it:) You may need to make a whole pitcher of this drink as it is that good!



Ingredients:
2oz Atlantico Platino Rum
1 oz lime juice
.75oz simple syrup
10 mint leaves
5 fresh raspberries

In a cup muddle raspberries and mint leaves. Add Atlantico Platino Rum, lime and simple syrup. Shake and serve over ice.

Herb and Garlic Pizza Dough

I have some fresh herbs growing in my garden and I want to get the most out of them so I made a pizza dough for dinner last night with some garlic minced inside and my fresh herbs chopped up. The dough was delicious and really simple too make. You should not have any troubles with it, especially if you have a mixer on hand.


Ingredients:
1 1/2 tsp yeast
1 1/2 cups warm water
1 tsp salt
1 garlic clove, minced
small handful of fresh chives and basil (any type of herbs will work)
4 cups flour
1/3 cup olive oil

Dinner Rolls

Is it just me or does everyone love breaking open a warm white bun and having it melt in your mouth? When it comes to buns I just love white buns. I know the multigrain and brown are probably way healthier but when it comes to buns you just don't ruin a good thing:) I have to be so careful when I make these because if they sit on my counter I will eat them and probably eat most of them.


Ingredients:
1 cup warm water
2 1/4 tsp yeast
1 egg
4 1/2 tsp vegetable oil
1/4 cup sugar
1 1/2 tsp salt
3 1/4 cup flour
2 tbsp melted butter (optional)

Chicken Linguine

Yesterday, I took my kids down to a local beach with a friend and we sat and watched a beached whale. He was only a year or two old, which was sad as he died so young. Walking in jeans up to your thighs is not the most comfortable feeling but it was really neat getting up pretty close to see such a spectacular creature. Just look at this beautiful baby.


Don't worry, I didn't cook up whale tonight! I just wanted to share with you what I saw today. Well, by the time I got home my tummy was growling and I was ready to cook up a yummy dish. 


Ingredients:
2 boneless chicken breasts, cooked
1/2 red pepper
1 small onion
5-6 garlic cloves
4-5 basil leaves
1 bay leaf
1 jar tomato sauce
1/2 tsp red chili flakes
1 cup red wine
1 tbsp sugar
1/2 cup Parmesan cheese
salt and pepper to taste
Linguine noodles

Mango-licious Ribs

So, I tried creating you all a real Mississippi gumbo the other night with chorizo sausage and prawns. Well, it looked delicious and I am sure it was not as bad as I seem to think it was. You are always your hardest critic when it comes to your own cooking. My family ate it and seemed to think it wasn't as bad as I was making it sound. I will post a photo for you so you could see what it looked like and you can determine for yourselves if you would like to see the recipe. (The photo is posted at the bottom of this blog post)
Growing up Ribs was always one of my favourite meals and it still might be. These ribs are so so yummy. They are sweet and a little spicy all at the same time. Grab a finger bowl, you will need it!


Ingredients:
Rack of pork ribs
1 really ripe mango
3/4 cup bbq sauce
2 tbsp brown sugar
1 garlic clove
4 dashes of hot sauce
1 small handful cilantro

Easy Red Sauce n' Meatballs

This recipe was inspired by Chef Michael Smith. My sister has been telling me about his spaghetti and meatballs and saying "you have to make these" so if you don't like them then blame her (just kidding). This meal was absolutely delicious and I would of followed his recipe directly but I didn't have all the ingredients so mine is a tad bit different from his and we loved it! I am going to share with you my version of his spaghetti and meatballs and you can either choose to follow mine or his, I won't mind.

Ingredients:
splash of olive oil
1 whole head of garlic
1 large onion
4 large ripe tomatoes
1 tsp dried basil
splash of red wine
salt and pepper to taste
1 bay leaf

meatballs:
1 lb ground beef
1/2 cup bread crumbs
small handful parsley
1 onion, grated
2 garlic cloves, minced
1/2 cup milk
1 egg
1 tsp dried basil
pinch of nutmeg
salt and pepper
1/2 cup Parmesan cheese

Alfredo with Bacon, Onion and Almonds

This meal is quite similar to a nice carbonara pasta, but with a twist. I got raving reviews from my kids and husband so you may need to try this one out! If you like a little spice to your pasta add a couple dashes of Franks Red hot sauce and it makes the dish really yummy.

Ingredients:
Chunk of bacon
1 large onion, sliced
1/4 cup almonds, sliced
1/4 cup soy beans
3 tbsp butter
3 tbsp flour
1 garlic clove, minced
2 cups milk
1 cup parmesan cheese
salt and pepper to taste
Pasta noodles
